BRIO Tuscan Grille - Danbury, CT - Upon entering the restaurant it was immediately clear that the hostesses were not familiar with the type of oil used in their kitchen. There were roughly five ladies at the front desk and none of them were experienced enough with the restaurants menu to know upon questioning what the kitchen was utilizing. That said they did immediately enquire with their kitchen staff and I was made aware that the type of oil utilized varies depending upon the item that is being prepared with olive oil, canola oil, and vegetable oil (soybean oil) being used in the kitchen. I was assured that upon request any menu item could be prepared in a separate pan with an oil of my choice. Upon being seated bread was quickly served at the table. The waitstaff was not familiar with the bread's ingredients but upon enquiry with the kitchen I was informed that the loaf bread was made on premise and that it was soy free. The flatbread served in the bread basket does contain garlic so be aware of this if you suffer from a garlic allergy. During the meal the manager visited our table and assured me that she was personally aware that we had food allergies and that every effort was being made to ensure we had a safe and enjoyable meal. I was quite impressed by this and felt that although the staff was not prepared for patrons with food allergies in that their knowledge of their menu items was a bit lacking they did step up to the plate by showing a competent degree of communication skills that allowed me to feel comfortable eating there once my food allergies were known. Also for those of you who can't eat gluten there is a separate gluten free menu, which even includes pasta so why not give Italian a try tonight! Overall I left this meal feeling pleasantly surprised so I will give this restaurant a four spoon rating.
